This pesto is one that I picked up during one of my market purchases in the stunning Campo di Flori. Needless to say – it didn’t last long as I spread lashings of this wonderful combination in a recipe created specifically for it. I had to quickly try and duplicate it and although, of course not exactly quite the same – it was pretty close and the best part – seriously easy to make.

 Serve this as a starter course or simply as part of brunch buffet on a lovely summers day.
